Of course you can serve these on their own but they are so so good with sour cream and warm queso.
Substitutes for turkey:
You can substitute any protein you like for the turkey. Some examples are ground beef, steak, chicken, shrimp, tofu etc.
In a pan over medium heat cook the ground turkey along with the ground cumin, ground coriander, Montreal steak spice, black pepper, paprika, adobo, browning, and mix well.
Add in the onion and garlic and cook for 6-8 minutes or until things begin to caramelize.
Add in the water and allow the mixture to simmer and reduce by 90%. You want the sauce to hug the meat but not be wet. Set aside.
In a baking dish layer 1/2 the tortilla chips, cheese, turkey, and repeat 1 more time.
Bake at 350 degrees for about6-8 minutes or until cheese is melted.
For the salsa combine the mango, corn, onion, tomato, jalapeno, cilantro, pepper, salt, and lime juice.
Sprinkle the salsa all over the warm nachos.
Sprinkle with Tajin and enjoy!
