Types of curry powder you can use:

You can use any kind of curry powder you have and like for this recipe. You can also use a mix of different curry powders like I have done.

For crispier wings in the oven:

Use a baking pan with a baking rack and do not over crowd the pan. Make sure the wings do not touch so that the hot air can circulate better around the wings.

Ingredients
    For marination:
  • 1.5 lbs chicken wings
  • 1.5 tbsp olive oil
  • 1 tbsp olive oil
  • 1 tbsp Chicken powder
  • 1 tsp tumeric
  • 1 tbsp onion powder
  • 1 tsp chili powder ((add more if your like it extra spicy))
  • 2 tsp garam masala
  • For sauce and finishing:
  • 2 tbsp butter
  • 1/2 tbsp Minced ginger
  • 1.5 tsp Minced garlic
  • 1/2 tsp thyme
  • 1 tbsp chopped cilantro
  • 2 tsp curry powder
  • 1/4 tbsp lime (for squeezing on wings at the end)
Instructions
  1. Season the chicken wings with olive oil, chicken powder, turmeric, onion powder, chili powder, and garam masala. Mix well and marinate for a few hours or overnight.

  2. Air fry or bake at 400 degrees F. The internal temperature of the chicken wings should read a minimum of 165 degrees F on a quick read thermometer. If you want to do things old school – cook the wings until brown and the centre of the wings should have no pink juices, flesh or blood present when cut open.

  3. In a pan over medium heat melt the butter. To the butter add the ginger, garlic, thyme, cilantro, and stir for 30-40 seconds. Don’t allow the garlic to burn.

  4. Add in the curry powder and stir for another 10-15 seconds. Remove from heat.

  5.  Pour the bubbly mixture all over your cooked wings and toss.

  6. Squeeze some fresh lime juice on top of the wings and enjoy!
