Description

Ingredients
    For dressing:
  • 2/3 cups mayo
  • 2.5 tbsp sugar ((see notes))
  • 1/2 tsp finely ground black pepper
  • 1/2 tbsp dry parsley
  • 1/2 tbsp dry dill
  • 2 tsp salt
  • 3 tbsp vinegar ((see notes))
  • 2 cloves finely mashed/grated garlic
  • Veggies:
  • 1.5 cups green cabbage thinly sliced
  • 1.5 cups purple cabbage thinly sliced
  • 1/2 small onion thinly sliced
  • 1/2 cup grated carrot
  • 2/3 cup cooked corn
Instructions
  1. To a large bowl add in the mayo, sugar, black pepper, parsley, dill, salt, vinegar, and garlic.

  2. Whisk or mix well together until sugar and salt dissolves. Taste and make adjustments to the sugar and vinegar (see notes).

     
  3. Mix all ingredients well and allow the coleslaw to sit in the fridge for 10-15 minutes before serving. Enjoy!

Note
  • Dill: Feel free to omit the dill if you do not like the flavour.
  • Sugar & vinegar adjustments: After you mix all the ingredients for your dressing – give it a taste. It should be strong and bold because it will coat all your veggies and disperse. If you are someone who likes your coleslaw on the sweeter side you can add more sugar to the dressing. if you prefer your dressing more tart add some more vinegar.
  • Slicing or dicing: If you prefer your coleslaw diced rather than sliced please prepare your veggies accordingly. Instead of slicing the cabbage and onions simply finely dice them instead.
