This quick and easy Beef and Veggie Chow Mein is perfect for any day of the week! It can be customized so many ways by using veggies and proteins you already have on hand and enjoy. Happy home cooking everyone!

Ingredients
  • 1 pack fresh-pre cooked-chow mein noodles (comes in 454gram packs)
  • 1 1/4 lbs beef (cut into think strips/slices)
  • 1 1/2 tbsp mushroom flavour soy sauce
  • 1 tbsp corn starch
  • 1 tbsp neutral flavour oil
  • 1 1/2 tbsp sesame oil
  • 2 tbsp garlic
  • 1 cup carrots (julienned)
  • 1 cup zucchini (julienned)
  • 3/4 cup cabbage (sliced)
  • 1/2 cup onion (sliced)
  • 1/2 cup green onion (sliced or julienned)
  • For sauce
  • 1/2 cup chicken broth
  • 2 tbsp oyster sauce
  • 2 tbsp mushroom soy sauce
Instructions
  1. Season the strips/slices of beef with mushroom flavour soy sauce (see notes for substitutes) and corn starch. Mix well and allow it to marinate for as long as you have.

  2. Place a large non stick pan or wok over medium-high heat. To it add in the oil, sesame oil, and garlic. Fry the garlic for a few seconds.

  3. Add in the beef and stir frequently for about 2-3 minutes.

  4. Add in the julienned carrot and stir fry for 1 minute.

  5. Add in the julienned zucchini and stir fry for 1 minute.

  6. Add in the sliced cabbage, onion and package of pre-cooked chow mein noodles (gently pull the noodles apart before adding them in). Stir fry for 3 minutes.

  7. Combine the chicken broth, oyster sauce (or hoisin sauce), and mushroom flavour soy sauce together.

  8. Pour the broth mixture over the noodles and combine well for about 30 seconds.

  9. Finish with some sliced green onion and enjoy!

Note

Chow Mein Noodles:

Save yourself some time and purchase a package of fresh pre-cooked chow mein noodles. You can find these packages in the refrigerated section of all asian grocery stores. They are also more regularly available at many other local grocery stores as well!

Veggies:

Use any veggie you have on hand or enjoy! Add in the tougher veggies like carrots first.

Beef Substitutes:

You can substitute the beef for any protein you like or keep it out completely for a meatless option. Some awesome substitutes would be shrimp, chicken, calamari or squid, lamb, sausage or even hot dogs if you like them!

Beef Cuts:

Use any cut of beef you have! If it is a tough cut of beef slice it super thin and do not cook it for too long.

Mushroom Flavour Soy Sauce Substitutes:

The substitute for mushroom flavoured soy is a dark soy sauce.

Chicken Broth Substitutes:

You can substitute the chicken broth with beef or veggie broth.
